Bursting with Basil

-2 cans of cannellini beans or white northern beans rinsed & drained
-Juice of 1 Lemon -- Sometimes 2 depending on size and taste. Start with 1 and if it needs more do not hesitate :)
-1/2 cup chopped basil ( 1/4 cup to be blended in, the other 1/4 cup to put on top )
-2 small cloves or 1 large minced garlic ( Same with the lemon-- add more garlic if need be! We think the more garlic the merrier-- just as long as everyone around is eating it too hahah)
-1/2 cup light olive oil
- 1 cup toasted pine nuts ( On stove top place a pan on medium heat. Put 1 cup toasted pine nuts and toast on each side for a few minutes each)
^^ now sometimes like this week, I opted out of pine nuts & add a little more lemon 😊
I LOVE my Vita-mix. I cannot describe the love I have for it. I was lucky enough to receive mine as a gift. They are pretty pricey, but boy are they worth every penny. Especially when it comes to making things like this hummus :)
- Place beans (drained & rinsed), 1/4 chopped basil, minced garlic, lemon juice, olive oil and 1/2 toasted pine nuts into your blender/Vita-mix etc.
-Keep adding olive oil or lemon juice to keep it processing
-Add salt and pepper to taste
Once it is blended together, take out with a spatula into serving dish. Then sprinkle the left over basil & pine nuts on top and ENJOY!
