BEST Fall Breakfast Bake

Ainsley & I LOVE to make us some Mug Cakes. Our favorite is HGHF Chocolate Banana Mug cake on the blog now. Also on my instagram page in highlights, both her & I walk you through how to make it :) So if you watch that video you will notice that A is ALL about it. So it is very hard to SHARE a mug cake hahah, so we needed to find a better solution. I came across one of my favorite Target 5 dollar spot finds this season so far, it was about 12oz ramekin type of dish! It was just big enough for a mug cake "share" for Ainsley & myself :) Then we started working on a "Halloween" one together. Below is a picture of the dishes! Seriously go get one now. They are dishwasher & microwave safe :)

Ainsley and I have already made this 3 times this week & just love love love it. So I hope you cozy up next to this, this weekend. So simple, so easy, warm & delicious :)


1 ripe banana

6 tbsp oat flour [THE EASIEST THING TO MAKE ON YOUR OWN, don't buy oat flour, please, make it, you will thank me later!:) ]

4 tbsp pumpkin puree

2 tsp maple syrup

dash salt

1/2 tsp pumpkin pie spice

1/2 tsp ground cinnamon

3 tbsp almond milk

1 egg

1 12 oz Ramekin ( linked here for one similar to the one from Target)


1. Grease the ramekin dish with coconut oil. Then add in the ripe banana. With a fork mash well, then add in the egg & almond milk, then continue to smash until full incorporated. After add in the pumpkin puree & maple syrup.

2. If you have not made the oat flour already you will do that. Add 2 cups old-fashioned rolled oats to your high power blender. Turn on low for about 30 seconds them rev up to medium high. Blend until fully powdered like flour! It is THAT simple. Then take 6 tbsp of oat flour & add to the ramekin. Then the rest of the dry ingredients, salt, pumpkin pie spice & cinnamon. Lastly add in as much of the Enjoy Life chocolate chip mini semi sweet that you want :) 2 tbsp is a good place to start. Then stir until fully combined.

3. Microwave on high for 4 - 4 1/2 minutes. Check at 4 with a tooth pick. Once it pasts the tooth pick test you are good to go!

Seriously, Ainsley & I just split right down the middle-- perfection.
