Banana Spice Blender Muffins

I love making muffins in my high power blender. I use my Vitamix ( FAVORITE blender of all time. Here is the link to the new one but they have refurbished ones as well! I highly recommend getting one) & just love how smooth & the even consistency. I made this combination the other morning for Ainsley & it was made in under 20 minutes. Then I have leftovers for the next few days! I am actually bringing some for my team that I teach with tomorrow :) We need a little treat to get use through the work week! Follow below for quick, gluten free, refined sugar free & dairy free muffins... say what?? Yep. trust me. You will LOVE. Ainsley's face was hysterical this morning when she woke in her bed & I told her I had banana chocolate muffins downstairs for her. Wish I would have gotten a picture of THAT! Enjoy!
2 ripe bananas
1/2 cup almond butter (make sure the only ingredients in it are ALMONDS)
1/8-1/4 cup maple syrup ( I use 1/4 to make everyone happy, but I could even to 1/8 to make it less sweet)
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp Pumpkin spice ( can omit if you don't like.. however I like the subtle spice it gives)
2 tbsp unsweetened vanilla almond milk (or whatever milk you decide!)
Preheat oven to 350 degrees
1. Grease a 12 cup muffin tin. Then in high power blender add in bananas, eggs, oats, almond butter, syrup, cinnamon, salt, baking soda, pumpkin spice & almond milk. Blend until fully incorporated!
2. Then evenly pour the mixture into the muffin tins & then sprinkle each top with Enjoy Life (Dairy free amazingness) semi sweet Chocolate Chunks! Bake for 12-15 minutes. Use tooth pick to check :) Then DEVOUR!
