Apple Crumb Mini Loaves

I spy with my little eyes..... Ainsley's finger in the loaves photo. So as you can tell, she was VERY anxious for "mommy to stop taking pictures" so she could get her hands on one of these! We went to Eckerts farm 2 weekends ago & this is how these puppies were born! Eckerts over in Bellville Illinois was such a blast. Truly, we could have spent all day there. I cannot wait to go back just so I can browse in their market forever.... I mean all the bread mixes, the jellies & the salsas... I would get in trouble! :)
We had the best time with the apple & pumpkin selection. Ainsley & I picked out a lot of red delicious, golden delicious & it was the last day for the Johnathan apples. When we got home Ainsley was very insistent on making our homemade apple sauce in the insta pot & then I wanted to create something that was like an apple crumb cake but breakfast bread form. So enjoy these little sweet bits of heaven in the morning with coffee & hopefully a little bit of silence before the craziness begins!
The recipe for the Apple Crumb Mini Loaves below :)
Ingredients/Directions under each part:
1 apple skinned & diced
1 tsp vanilla
1 1/2 tsp bourbon (optional.. but recommended)
1 1/2 tbsp coconut sugar
1 tsp ground cinnamon
1 tsp lemon juice
pinch of salt
Directions: In a medium sized bowl toss in the diced apple & sprinkle coconut sugar, cinnamon & salt. Then pour the vanilla on top, lemon juice & bourbon. Toss until evenly coated then move on to the crumb top!
1/3 cup flour ( I have used whole wheat or almond flour before. Using almond flour will make this recipe gluten free)
1 1/2 tbsp butter
1/4 cup coconut sugar
2 tsp cinnamon
Directions: In a high power blender add in flour, butter, sugar & cinnamon. Then pulse until combined. WHOLE WHEAT FLOUR: consistency will be crumbly. ALMOND FLOUR consistency will seem more of a flour, sugar, buttery spread. That is OKAY I then take pieces & put it on top of each loaf & it melts down to perfection!
1 1/2 cup old fashioned oats (gluten free to make it a gluten free recipe)
1 cup applesauce ( we used our homemade I mentioned above!)
1/4 cup maple syrup
1 tsp vanilla
1/4 cup unsweetened vanilla yogurt So Delicious or dairy yogurt of choice
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
Preheat oven to 375 & grease an eight loaf tin.
1. In high powered blender add in oats, applesauce, eggs, maple syrup, vanilla, yogurt, baking soda, salt & cinnamon. Blend until throughly combined. Then evenly pour out the batter in the 8 mini loaves.
2. Next evenly distribute the seasoned apples on top of each loaf, pushing down a bit to get them stuck to the top. Then sprinkle the crumb top over each one! Then put in the oven at 375 from 15-18 minutes. Keep checking until the tooth pick is clean!
